First things first, you might notice these photos are giving off major holiday feels and admittedly, this was meant to be shared last month, but then life happened and this got pushed to the backburner. Luckily, this recipe would be perfect for the Super Bowl or a Valentine’s/Galentine’s Day get together! You could even include the mistletoe for the latter if you feel so inclined. 😉When I went home to visit my family at Thanksgiving my mom put this delicious goat cheese spread together and I couldn’t stop with it. The recipe is so simple it’s almost silly. Here’s what you’ll need: 1 small goat cheese log, extra virgin olive oil, and dried basil. Seriously, that’s it!You can serve it on a plate or in a bowl (like you see here), it’s up to you! Simply drizzle the olive oil on a plate or create a thin layer at the bottom of a bowl, add the goat cheese on top, break down the cheese a bit with a fork, sprinkle the desired amount of basil, top with another drizzle of olive oil, and voila! Easy, right?
A few quick tips: Even though the goat cheese is already soft, I prefer it to sit out for 5-10 minutes to let it soften more. You can serve it up with crackers (I love the flaxseed crackers from Trader Joe’s) or baguette slices, which you could toast if you’d like!Add the usual accompaniments (an assortment of nuts, grapes, sweets, etc.) for a spread fit for any party, and then send me the invite, will you?
