I don’t know about you all, but the last thing I want to do when I get home from work is slave over the oven for several hours. With that being said, I’m all about the quick and easy when it comes to dinner. Today I’m bringing you a delicious Chicken Philly recipe that my step mom taught me to whip together!
Easy Chicken Philly Recipe
Serves two
For the sandwich:
1 chicken breast
1 T. Cooking oil
1 T. Lemon pepper seasoning
1/3 onion
1/2 green pepper
2 hoagie buns
2 slices of provolone cheese – I prefer non-smoked
Directions:
1. Start by cutting the chicken breast into quarter size pieces and slice both the peppers and onions into 1/3 inch strips
2. Add 1/2 T. of cooking oil to a pan and bring to medium heat, next add the chicken and sprinkle with desired amount of lemon pepper seasoning, be careful-it can be potent!
4. Add the remaining 1/2 T. of cooking oil to another pan on a medium heat setting. Add strips of onion and green pepper
5. Cook chicken until it’s no longer pink in the middle and the veggies until they are golden brown. It’s easy to overcook the chicken since the pieces are so small so keep an eye on it
6. Pop the buns into the toaster or toaster oven until they are lightly brown and crispy
7. Add chicken to the hoagies, pile on the onions, peppers and top with provolone cheese
